Tofu & Shimeji Mushroom Japanese Salad Recipe

Even though tofu is known to be very healthy, a lot of people don’t know how to cook with it. If you know the way to prepare it, it is so delicious. Tofu salad, with a Japanese citrus dressing (ponzu), is common dish in Japan. This refreshingly light salad is perfect as a side dish to heavy meals or you can enjoy it by itself as a light summer lunch

1 knob of garlic –finely chopped
1 bunch of enoki mushrooms - (stems removed)
1 tbsp parsley – finely chopped
1 tbsp SAORI Citrus & Soya Japanese Sauce ( for cooking )
200g tofu ( silken tofu is best )- cut into 1cm cubes
1 tbsp olive oil
200g salad mix
1 tomato – cubed into small pieces
50 ml SAORI Citrus & Soya Japanese Sauce (salad dressing)

In a frying pan, simmer garlic in olive oil until golden brown
Add enoki mushrooms and parsley and cook for a further 5 minutes
Drizzle on SAORI Citrus & Soya Japanese Sauce and cook for an extra 1 minute
In a salad bowl, toss tofu, tomato and salad mix together and garnish with the enoki mushrooms
Drizzle on SAORI Citrus & Soya Japanese Sauce
