Kimchi Chahan (Fried Rice) Recipe

Kimchi is spicy Korean pickles. My friend gave me a recipe for homemade Kimchi so I had a go at making it myself last week.It turned out much better than I had hoped! When you make kimchi fried rice, the key is to stir-fry the kimchi before you put the rice in. It gives a richer and tastier flavour that way.You can find kimchi at any Asian grocers in the fridge section. It is beautifully spicy and makes your body feel warm.

*2 cup Japanese sushi(koshi) rice - cooked
*100g kimchi - slice 1cm strips
*2-3 tbsp finely chopped spring onions
*2 eggs - beaten
*3 tbsp SAORI GOMA (Sesame & Soya Japanese Sauce)
*100g pork loin - 1cm strips
*1 tbsp sesame oil

1:Quickly stir fry kimchi in oil, add pork strips and keep cooking until pork is cooked (approx 3 minutes)
2:Add eggs and cook for 1 minute and then put in rice and spring onions
3:Drizzle in SAORI GOMA
4:Use the bottom part of ladle to push & mix the ingredients for a further 3-5 minutes (until everything looks evenly cooked through)
