tofu meat balls (vegan Japanese meat balls) recipe

I used semi dried tofu for this recipe to give them a similar texture to chicken. Shitake mushrooms give them a more complex flavour and onion and carrot add a nice crunchy texture. Ponzu goes very well with these tofu meat balls. They are delicious! My husband & I loved them so much that there were no left-overs for our son...(he was so jealous!)

500g semi dried tofu
1/3 carrot
4 shitake mushrooms
1/2 onion
2 tbsp corn flour
2 tbsp SAORI Ponzu( Citrus & Soya Japanese Sauce)
olive oil for frying
salad mix
2-3 tbsp grated daikon
SAORI Ponzu for drizzling

1:to make mince mixture, put tofu, carrot, shitake mushrooms,onion and corn flour in a food processor. After chopped in food processor, flavour with SAORI Ponzu

2:make small balls with the mixture

3:fry the tofu balls in olive oil.Turn them a couple of times until golden all over.

4:serve them on a mixed salad

5:garnish with daikon and drizzle on SAORI Ponzu.
